My husband and I attended a cooking demonstration by Tom Colicchio and Gail Simmons at the Metropolitan Cooking and Entertaining Show in DC last year.
I am a huge Steak and Potato girl so this recipe is our version of Tom’s Pan-Roasted Sirloin out of his book “Thnk Like a Chef” with my mashed potatoes:
Steak:
1 tbsp peanut oil
1 14-ounce sirloin steak 1 1/2 – 2 inches thck
Salt
Pepper
Thyme
Rosemary
2 tbsp butter
Williams Sonoma Chardonnay Sea Salt
Heat oil in a cast iron skillet over medium heat
Pat the steak dry and cut into 2 or 3 pieces
Mix the seasoning together and coat the steaks in the seasoning
Sear each side of the steaks for 2 mins each to make a crispy crust on each steak
Add the butter to the skillet
Continue cooking for another 15 mins for medium rare, turning each side every couple of minutes and basting with the browning butter
Remove the steaks and allow them to rest for 10 minutes
Sprinkle the Chardonnay Salt on top and Serve
Mashed Potatoes:
6 Potatoes
Soy Milk
Butter
Salt
Colby Jack Cheese
Wash and peel potatoes
Boil until soft
Drain water
Add milk, butter, salt, and cheese (amounts vary depending how creamy you like it)
Hand mash to your desired creaminess
