Amazing Beef Stew

Last night, I decided to try a new beef stew with dumplings recipe:

Stew:

  • 1/4 cup plus 1 tablespoon all-purpose flour
  • 2 tsp Salt
  • 1 tsp Pepper
  • Beef Stew Meat
  • 2 tbsp olive oil
  • 1 small onion
  • 2 tbsp tomato paste
  • 1 cup red wine
  • 1 quart beef broth
  • 2 bay leaves
  • 1 tbsp thyme
  • 4 carrots
  • 7 small potatoes
  • 3 celery stalks
  • 1 can of peas
  • 1 can of corn
  • Mix together flour, salt, and pepper
  • Coat stew meat
  • Heat olive oil
  • Brown stew meat and remove
  • Brown onion
  • Add tomato paste
  • Add extra flour
  • Add red wine
  • Stir and scrape up the brown bits from the bottom
  • Add beef broth
  • Return stew meat
  • Add bay leaves, thyme and more salt and pepper
  • Bring to a boil and then simmer uncovered for 45 minutes
  • Peel and cut carrots and potatoes
  • Add carrots, potatoes, celery, peas, and corn
  • Cook covered for an additional 45 minutes
  • Remove bay leaves before adding dumplings

Dumplings:

2 cups Bisquick

2/3 cup milk

Stir until sticky

Spoon on to stew 20 minues before it’s done

Cook for 10 minutes uncovered

Cook for another 10 minutes covered
